Meet the team

Breadfern Bakery is home to passion, excellence and a mastery of creating shared experiences. It’s this passion for good food that brings us together – our team, our customers, our community, and of course, the best local suppliers in the business. Our family spirit runs through everything we do: it’s why you’ll find laughter, creativity and food that is reminiscent of grandma’s – filled with love, abundance and sense of childhood fun. And, at the helm you’ll find the business brains and centre of creativity with two familiar faces: Michel Akolbi and Simon Veauvy. Learn more below, or better yet, come on in and say hello!

Meet Simon Veauvy

Simon is Breadfern’s creative force with a fierce passion for quality and innovation, creating an experience that not only tastes exceptional, but is unforgettable.

As a French national, Simon has dedicated his entire career to mastering the art of pastry, beginning his training at the locally cherished Patisserie Rebert in Alsace, France. His talent soared with experience in globally renowned institutions such as Pierre Hermé, before taking his passion across the world in pastry kitchens from Paris to New York, Seoul to Tokyo – and finally, leading the charge as Executive Pastry Chef at the iconic InterContinental Sydney as the Harbour City became home.

After years collecting international experience in fast-paced kitchens, Simon says his greatest joy comes from connecting with customers – seeing their faces, hearing their stories and being able to share his fondest memories through food: traditional, French creations from his childhood.

For Simon, his philosophy is simple: great food that master the basics; authentic and simple in their execution, yet tell a thousand tales through clever ingredients, time and excellence.
